The complexity found in this wine is a result of extended time on the yeast and in the bottle. Aging "en tirage" allows a superb flavor known as "goût de champagne" to develop in the wine. Although this is a labor intensive and therefore expensive process, it is the only means of achieving this flavor. After aging "en tirage" is complete, the wine is disgorged. This process involves removing the frozen yeast sediment from the neck of the bottle.

Flavor and Aroma:

This bubbly is for people who enjoy wine with complex aromas and flavors. The complexity found in this dry wine results from extended time on the yeast and in the bottle. Aging "en tirage" allows a superb flavor known as "goût de champagne" to develop in the wine. Although this is a labor-intensive and therefore expensive process, it is the only means of achieving this flavor. Made primarily from Chardonnay, the Blanc de Blanc exhibits toasty aromas (think freshly toasted brioche bread) and subtle flavors of Meyer lemon, green apple, and Bartlett pear. This sparkling wine has the classic characteristics of a true Champagne produced in that region of France.

Aging Potential:
Sparkling wines when consumed young show fresh crisp qualities. When cellared properly this wine unfolds with creamy toastiness and will easily last five to ten years.

Thoughts for Food:
Sparkling wine is sensational with smoky or salty appetizers like cheese straws, roasted pecans or smoked salmon. An excellent accompaniment for brunch, it goes well with any egg dish. This sparkler is also wonderful with oysters and other shellfish. Many pair sparkling wine with Chinese and Thai dishes. It is the classic dessert wine.
