We are delighted to announce the release of our highly anticipated Blanc de Noir sparkling wine, crafted especially to commemorate our 25th Anniversary.

The complexity found in this wine is a result of extended time on the yeast and in the bottle. Aging "en tirage" allows a superb flavor known as "goût de champagne" to develop in the wine. Although this is a labor intensive and therefore expensive process, it is the only means of achieving this flavor. After aging "en tirage" is complete, the wine is disgorged. This process involves removing the frozen yeast sediment from the neck of the bottle.

Flavor and Aroma:

Our Blanc de Noir, a "traditional" dry sparkling wine, offers enchanting aromas of fresh-cut Gala apples, delicate notes of lemon shortbread, and subtle hints of marzipan. This wine's graceful and softer mouthfeel, enlivened by a delicate mousse, unveils captivating flavors of white raspberry and fresh croissants. It's a truly joyous experience and an excellent companion for any occasion, big or small.

Aging Potential:
Sparkling wines when consumed young show fresh crisp qualities. When cellared properly this wine unfolds with creamy toastiness and will easily last five to ten years.
