As the name implies this wine was harvested on the winter solstice in 2020. At the time we planned to use this fruit to make Ice wine, but Mother Nature was not being cooperative. So instead, the wine making team decided to try something a little different. Because the fruit had been left to hang for Ice wine it had ripened to the last possible moment and had lost water weight making it much more concentrated that if it had been harvested in October. The team fermented more of the sugar out than usual bringing the alcohol up to 13% and the sugar content down to 6%. While still sweet this wine displays an intensity reminiscent of Ice wine.

Tasting Notes:

This complex wine expresses enticing aromas of citrus and white flowers followed by peach, mandarin, and melon on the palate.

Food for Thought:

Well-suited for sipping after a meal, or paired alongside a myriad of desserts. Recommendations include, a range of cheeses from dry and sharp to soft and mild. Also consider shortbread, cheesecake, panna cotta, and crème brulée.
